Strawberry Shortcake Truffle Bites
Nutritious High Protein Summer Dessert
☕️ These strawberry shortcake truffle bites are a quick, healthy, and easy no-bake snack or dessert recipe!

About 12-15 Bites
For the filling:
🍪 9 graham crackers (Honey or regular unflavoured will work)
🍓 1 cup strawberries
🍰 1 single serve all in one strawberry shortcake (~30g or 2 tbsp)
🌱 3/4 cup almond flour
For the coating:
🫕 1 cup white chocolate chips (Can use vegan alternative)
🥥 2 tbsp coconut oil
🍦 1 tbsp smoov all-in-one vanilla cream
Optional: 1-2 tbsp maple syrup in the filling. Keep in mind this depends on the chocolate chips used and whether they're sweetened or not. Only add maple syrup if you have a very SWEET tooth.
1. Add graham crackers to a high speed food processor and blend until crushed.
2. Add strawberries, smoov all-in-one strawberry shortcake and almond flour. Blend for a minute or two until a sticky dough-like consistency is achieved.
3. Lay cookie sheet on a pan or use non-stick plate. Scoop dough using a spoon and form into bite sized balls using hands. Use about 1-1.5 tbsp of dough for each bite. You should get about 12-15 bites.
4. Store in freezer for 15-30 mins to harden.
5. While the filling is freezing, add coconut oil and chocolate chip to a microwave safe bowl. Microwave in two 30 second increments until melted.
6. Once filling is hardened, dip each ball into coating and place on tray/plate.
7. Once all the bites are coated, freeze for another 5-10 mins until hardened.
8. This no-bake snack should be enjoyed after the chocoate coating freezes (~5-10 minutes). For storage, keep them inside the freezer. Be sure to dethaw them for several minutes before enjoying.
