Golden Coconut Mango Truffles
Light, Refreshing, Vitamin Rich Snack Recipe

Prep Time: 10 minutes
Makes 5-7 Truffle Bites
🥭 1 cup frozen mango*
🍁 1 tbsp maple syrup (or sugar free syrup)
🌰 1 tbsp almond butter
🥥 1 tbsp coconut oil
🌱 1 tbsp chia seeds
🥥 1 tbsp dessicated coconut
🌰 1/8 cup almond flour
💪 1 tbsp SMOOV pea protein
☀️ 1 tbsp SMOOV golden blend
🥥 Extra Dessicated Coconut for rolling.
*Use 1/2 cup frozen mango if you plan on storing them for a while. The more frozen mango you use, the more likely the truffles are to melt.
1. Add all ingredients to a high speed food processor and blend on high for a minute or two, until you get a dough-like consistency
2. Form into bite sized pieces and roll in coconut shreds.
3. Enjoy and store some in the fridge for later!
