Baked Lemon & Blush Glazed Donuts

Makes: 10 Mini Donuts
Time: 45 Minutes
Ingredients (Donuts)
120g All Purpose Flour
1⁄4 tsp Baking Soda
1⁄4 tsp Salt
50g White Sugar
13g Brown Sugar
1⁄4 cup Milk
1⁄4 cup Vanilla Greek Yoghurt (or normal yoghurt)
2 tsp lemon zest
1 tsp lemon juice
1 egg
30g melted butter
1 1⁄2 tsp Vanilla
Ingredients (Glaze)
1 cup Icing Sugar
1.5 tsp Blush Blend
1⁄4 cup Milk
DIRECTIONS
1. Pre-heat oven to 350F and spray a donut pan with cooking spray
2. In a medium bowl, whisk together flour, baking soda & salt
3. In a large bowl whisk egg until lightly beaten. Then add melted butter, lemon zest and
juice & vanilla, whisking until combined.
4. Add both sugars and whisk for 1-2 minutes
5. Add milk & yoghurt to the wet mix and whisk until combined
6. Add your dry ingredients and mix until just combined.
7. Add your donut mix to a piping bag (or ziplock bag) and fill your donut pan.
8. Bake in the oven for 10-11 minutes, until edges are lightly golden.
9. Let cool completely before glazing.
Glaze
10. Add all your ingredients to a medium bowl and mix until smooth. If mixture is too thin
add some more icing sugar, if it is too thick - add some more milk until you get your
desired consistency
11. Once donuts are cooled, dip them into the glaze and garnish with extra lemon zest.
Wait for the glaze to harden & enjoy!
